Cappadocia's landscape of fairy chimneys and rock cut churches sits an hour's flight from Istanbul, and the hotels are carved into the same stone. Two nights is the usual stay: a dawn balloon flight, a guided walk through the Rose and Red valleys, the underground city at Derinkuyu and an evening on a terrace watching the light change. We book the balloon operator with the best safety record rather than the cheapest, and arrange a driver so that the day is not spent negotiating.
