Once the home of the Guinness family, it is now part of the Red Carnation Hotel Collection and operates as a multi-generational resort across a 350-acre estate.

The property holds 83 individually designed rooms and suites, among them Corrib Rooms, Corrib Lake View Rooms, Deluxe Rooms, Deluxe Queen Family Rooms, Lake View Deluxe Rooms, and the historic Boathouse, set apart over the lake. Guests dine across seven restaurants, including George V Dining Room, The Dungeon, Cullen's at the Cottage, The Drawing Room, Stanley's, The Connaught Room and Wilde's at The Lodge, alongside three bars: The Prince of Wales Bar, The Billiards Room & Cigar Terrace and The Wine Cellar. Produce is drawn in part from the estate's own Kitchen Garden.

Estate activities include falconry with a Harris Hawk, horseback riding through the woodlands and archery. The Spa at Ashford Castle was named Ireland's Best Hotel Spa for 2025, its tenth consecutive year receiving the award from World Spa Awards, and sits alongside the Éalú Pool and Gym. The castle also hosts weddings and private dining, including a wine tasting held in its 16th century tunnels and a private dining experience at Squire Danagher's Cottage, the house used in the filming of The Quiet Man.
