Hotel · Ito, Japan
A 30-room hot spring ryokan in Ito, Shizuoka, with three onsen baths, a garden that blooms through the year and kaiseki built on Izu's lobster, abalone and golden eye snapper.
KAI Ito sits in Okahiro-cho, about five minutes by car from Ito Station on the Izu Peninsula. The ryokan has 30 rooms, accommodates between one and eight guests, and draws its baths from Ito Hot Spring. Three onsen are set within the property, including an outdoor bath fed by a waterfall cascading down a rock wall and an indoor bath where hot spring water bubbles continuously from its centre. A garden on the grounds is planted so that flowers bloom through the year, and a pool is also available to guests.
Camellias grow locally from late autumn to early spring, and guests can press their own camellia oil from the flower's seeds, part of the ryokan's focus on Izu's culture. Rooms carry this theme indoors: KAI Signature Rooms are decorated with flower calendar screens, hangings woven with threads dyed using plants and flowers from Izu to mark the turning seasons, while the property's special Japanese-style rooms add traditional hanging decorations of their own.
Dinner centres on Izu's three signature ingredients, kinmedai (golden eye snapper), Ise lobster and abalone, served as kaiseki in semi-private rooms or at tables seating up to ten. Wagyu beef grilled on a ceramic plate is available as an additional dish. Breakfast draws on the same regional repertoire, including a set inspired by a traditional Izu fisherman's breakfast of horse mackerel sashimi with Welsh onions and miso paste, alongside a Western-style option, unavailable from 1 to 3 January. Vegetarian kaiseki and a vegetarian breakfast are both offered, prepared free of the eight major allergens, and children's platters are available for guests aged four to six and seven to eleven.
