Overview

Borgo Santo Pietro occupies an 800-year-old farmhouse villa outside Chiusdino, in the Val di Merse south of Siena. Danish owners Jeanette and Claus Thottrup found the building in 2001, then a ruin surrounded by fallow fields, and spent seven years restoring it before opening in 2008. The estate runs to 300 acres of organic farmland, gardens and vineyards, close to the Via Francigena pilgrim route and the medieval town of Chiusdino, six kilometres away.

The hotel has 22 rooms, each designed individually with antique furniture, bespoke beds and hand-painted frescoes. Categories range from villa suites in the original 12th century building to Garden Suites with a Mediterranean courtyard, and two tiers of private estate suites with their own gardens or pools. Some suites can be connected internally for families or groups travelling together. Food comes from the estate itself: Borgo Santo Pietro Saporium, the Michelin-starred restaurant led by executive chef Ariel Hagen, works from soil-to-plate cuisine, while Trattoria Sull'Albero, built around a spreading oak tree overlooking the Valle Serena, serves a classic Tuscan menu of farm produce and hosts a Monday evening Farmers' Market with live music.

The estate includes market gardens, nut fields, herb gardens, vineyards and forest, along with sheep whose milk is turned into cheese and yogurt at the on-site dairy, plus free-range chickens, bees and alpacas. Spa treatments are built around Seed to Skin, the organic skincare range developed on site by founder Jeanette Thottrup with cosmetic scientist Anna Buonocore in the property's own laboratory. Guests can also charter Satori, a hand-carved wooden schooner with five cabins, along the coasts of Italy, France, Greece, Turkey and Croatia. The hotel was awarded Three MICHELIN Keys and a Green Star plus Red Star in the Michelin Guide 2025, and was listed in Fodor's Finest Hotels Awards 2025.
